Our cauliflower this year was huge. They were planted in a bed that had been sheet composted with chicken manure and you could tell the plants were happy. I wanted to try pickling some again this year but I decided to take the easy route and just blanch and freeze what we didn’t eat fresh.
From just three heads, I ended up putting 11.5 lbs of blanched cauliflower florets in the freezer.
I foresee many more meals of Cauliflower Cheese in our future …

I pickled some last year for my wife. But she moaned that they were too strong and couldn’t eat them. What recipy did you use?

Hi Kev. The recipe I used last year was from the Joy of Pickling. I went and cracked open my last jar so I could remember how I liked it. I thought it was a little too strong on the cumin flavor so if I made it again I would reduce it. Honestly, while I did like the recipe and would make it again, I would probably try a new one next time to see if I found a recipe I liked better.
those cauliflower are as big a Sputnik! It also looks like someone mixed some blueberry with your cauliflower…who knows it might be the next Reese’s Peanut Butter Cup flavor combination..(if it is I want 7% for the discovery)
I’m going to have to start using Sputnik as a size comparison too. It’s famous enough that everyone knows about it but obscure enough that few know how big it was.
I haven’t noticed any blueberry flavor in the cauliflower yet, but I’ll let you know if it happens. (I’ll also wish I had let one of these plants go to seed.)
